Buying persimmons. At the market, choose sweet, seedless and non-astringent persimmons that are firm and still have green, semi-pliable caps, and that are free of bruises.
Check the label on the fruit for seedless and sweet - ready to eat. 
Choose good eating quality persimmons like sweet, seedless and non-astringent Jiro or Fuyu 
Australian Sweet persimmons are in season from beginning of February until mid July. 
Surface skin blemishes are fine, as they have no effect on the flavour and eating quality. 
The fruit can range in colour from a pale orange to a deep red orange depending on the region. 
Even though they are firm to touch, the thin skin is delicate and bruises easily, so handle with care. 
If you are looking for persimmon to use in cooking and fruit sherbets, persimmons that have gone soft are ideal, but must be handled very gently.
