Harvesting / packing (new button)
Mid February we will start with harvesting.
Each persimmon is selected when ready, and clipped from the tree by hand. Special-purpose precision secateurs are used which have been designed to make a clean cut above the calyx, leaving the calyx attached to the fruit, without bruising the fruit or damaging the branch. 
The fruit is then carefully placed by hand into harvest crate. All possible care is taken to ensure that only high quality fruit, entirely free of damage, arrives at the pack-house door. 

Packing
A special fruit packaging grading machine is used in the pack-house. All freshly picked persimmons are washed, polished and graded to ensure only the very best quality fruit find their way into the trays. Graded, inspected and passed fruit are then individually weighed and labelled, and placed by hand into individual protective pockets in trays of various count sizes in accordance with the needs of our customers and markets.
