Winter It is during the winter dormancy that we undertake the winter prune. This consists of pruning and shaping the tree to promote the coming season's fruiting wood as well as ensuring that the tree continues to conform to the most productive shape and form. All pruning is done by hand - one branch at a time, one tree at a time - by trained and patient horticulturists using air pruners.
